WW Fluffy Pancakes Recipe

Ingredients

  • Dry Ingredients:

    • 1 cup all-purpose flour (or whole wheat flour)
    • 2 tablespoons sugar (or a sugar substitute)
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
  • Wet Ingredients:

    • 1 cup skim milk (or any milk of your choice)
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1 tablespoon melted butter or oil (optional, for added flavor)

Instructions

1. Prepare the Batter:

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  • In another bowl, whisk together the milk, egg, vanilla extract, and melted butter (if using).
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

2. Preheat the Pan:

  • Heat a non-stick skillet or griddle over medium heat. If desired, lightly grease the pan with cooking spray or a small amount of oil.

3. Cook the Pancakes:

  • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  • Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.

4. Serve:

  • Serve the pancakes warm with your favorite toppings, such as fresh fruit, a drizzle of maple syrup, yogurt, or a sprinkle of powdered sugar.

Tips

  • Customization: You can add mix-ins like blueberries, chocolate chips, or chopped nuts to the batter for extra flavor.
  • Storage: Leftover pancakes can be stored in the refrigerator for up to 3 days or frozen for longer storage. Reheat in the microwave or toaster.
  • Serving Size: Adjust the serving size according to your WW points. You can also use a food scale to measure the batter for more precise portion control.
