Weight Watchers Lemon Cake

Here’s a simple and delicious Weight Watchers Lemon Cake recipe that is light, flavorful, and easy to make!

Ingredients:

  • 1 box of sugar-free yellow cake mix (you can find this in most stores)
  • 1 cup of water
  • 1/2 cup of unsweetened applesauce (instead of oil to reduce calories)
  • 1 package of sugar-free lemon gelatin (for extra lemon flavor)
  • 1/2 cup of plain non-fat Greek yogurt (adds creaminess)
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of lemon extract (optional for a more intense lemon flavor)

For the glaze:

  • 1/2 cup powdered sugar (you can use a sugar substitute for lower calories)
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon of lemon zest (optional, for added freshness)

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or line it with parchment paper.
  2. Prepare the cake batter:
    • In a large bowl, combine the sugar-free cake mix, water, applesauce, lemon gelatin, Greek yogurt, vanilla extract, and lemon extract (if using).
    • Mix well until all ingredients are fully combined. The batter will be a bit thick.
  3. Bake the cake:
    • Pour the cake batter into the prepared baking dish and spread it out evenly.
    • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  4. Prepare the glaze:
    • While the cake is baking, whisk together the powdered sugar, lemon juice, and lemon zest in a small bowl until smooth.
  5. Glaze the cake:
    • Once the cake is done, allow it to cool for about 10 minutes in the pan.
    • Pour the lemon glaze evenly over the warm cake. The glaze will soak into the cake, giving it a moist and tangy finish.
  6. Let the cake cool completely before cutting into it.

  • This recipe makes about 12 servings, and each serving is light on points if you’re following the Weight Watchers program.
