Here’s a delicious recipe for Vegan French Toast Sticks! These are perfect for a quick breakfast or snack and are easy to make. They’re crispy on the outside and soft on the inside, and you can serve them with your favorite syrup or toppings.

Vegan French Toast Sticks Recipe

Ingredients

  • 1 cup plant-based milk (such as almond, soy, or oat milk)
  • 1 tablespoon ground flaxseed (mixed with 2.5 tablespoons water, let sit for 5 minutes to thicken)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1 tablespoon maple syrup (or sweetener of choice)
  • 6-8 slices of bread (thick slices work best, such as Texas toast or sourdough)
  • 2 tablespoons coconut oil or vegan butter (for frying)
  • Powdered sugar or additional maple syrup for serving (optional)

Instructions

  1. Prepare the Flax Egg:

    • In a small bowl, mix the ground flaxseed with water and let it sit for about 5 minutes until it thickens.
  2. Make the Batter:

    • In a large mixing bowl, whisk together the plant-based milk, thickened flax egg, vanilla extract, cinnamon, nutmeg (if using), and maple syrup until well combined.
  3. Slice the Bread:

    • Cut each slice of bread into strips (about 1-2 inches wide) to create French toast sticks.
  4. Dip the Bread:

    • Heat a non-stick skillet or griddle over medium heat and add a little coconut oil or vegan butter.
    • Dip each bread stick into the batter, making sure to coat it well but not soak it. Allow any excess batter to drip off.
  5. Cook the French Toast Sticks:

    • Place the coated bread sticks in the heated skillet. Cook for about 2-3 minutes on each side, or until golden brown and crispy. You may need to add more oil or butter to the skillet as you cook the remaining sticks.
  6. Serve:

    • Once cooked, remove the French toast sticks from the skillet and serve warm. Dust with powdered sugar or drizzle with maple syrup if desired.

Tips:

  • Bread Options: Use your favorite type of bread. Gluten-free bread works well too if you need a gluten-free option.
  • Toppings: Feel free to add toppings like fresh fruit, nut butter, or dairy-free yogurt for extra flavor and nutrition.
  • Make Ahead: You can prepare the batter in advance and store it in the refrigerator for up to 2 days. Just give it a good stir before using.
