Ukrainian Paska is a traditional Easter bread that is rich, slightly sweet, and often decorated with intricate designs. It’s a beautiful centerpiece for any Easter celebration. Here’s a recipe to make your own Ukrainian Paska at home!

Ukrainian Paska Recipe

Ingredients

For the Dough:

  • 4 cups all-purpose flour (plus more for dusting)
  • 1 cup milk, warmed
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 2 teaspoons active dry yeast
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional)
  • 1/2 teaspoon ground nutmeg (optional)

For the Egg Wash:

  • 1 egg, beaten (for brushing on top)

For Decoration (optional):

  • Colored sprinkles or additional dough for decorative shapes

Instructions

  1. Activate the Yeast:

    • In a small bowl, combine the warm milk and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.
  2. Prepare the Dough:

    • In a large mixing bowl, combine 2 cups of flour, salt, nutmeg (if using), and lemon zest (if using). Mix well.
    • In another bowl, whisk together the eggs, melted butter, and vanilla extract. Add the frothy yeast mixture to the egg mixture and stir to combine.
  3. Combine Wet and Dry Ingredients:

    • Gradually add the wet ingredients to the dry ingredients, mixing until combined. Add the remaining flour, 1/2 cup at a time, until a soft dough forms.
  4. Knead the Dough:

    • Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic. If the dough is too sticky, add a little more flour as needed.
  5. First Rise:

    • Place the dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
  6. Shape the Paska:

    • Once the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into two equal pieces (for two loaves) or keep it whole for one large loaf.
    • Shape the dough into a round loaf and place it in a greased round cake pan or a loaf pan. If desired, you can reserve a small piece of dough to create decorative shapes on top.
  7. Second Rise:

    • Cover the shaped dough with a towel and let it rise again for about 30-45 minutes, or until it has risen to the top of the pan.
  8. Preheat the Oven:

    • Preheat your oven to 350°F (175°C).
  9. Egg Wash and Bake:

    • Brush the top of the dough with the beaten egg for a golden finish. If using, place your decorative shapes on top and brush them with egg wash as well.
    • Bake in the preheated oven for 30-40 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom. If the top browns too quickly, you can cover it loosely with aluminum foil.
  10. Cool and Serve:

    • Remove the Paska from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before slicing.

Tips:

  • Storage: Paska can be stored in an airtight container at room temperature for up to 3 days. It can also be frozen for longer storage.
  • Serving Suggestions: Paska is often served with butter, honey, or jam. It can also be enjoyed plain or toasted.
