Ingredients

  • 2 cups rolled oats
  • 2 ripe bananas, mashed
  • 2 large eggs

Optional Add-Ins (Choose any combination):

  • 1/2 cup chocolate chips
  • 1/2 cup chopped nuts (walnuts, pecans, etc.)
  • 1/2 cup dried fruit (raisins, cranberries, etc.)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder (for a lighter texture)
  • 1 teaspoon cinnamon (for added flavor)

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.
  2. Mix the Ingredients:

    • In a large mixing bowl, combine the rolled oats, mashed bananas, and eggs. If you’re using any optional add-ins (like chocolate chips, nuts, or vanilla extract), add them now. Mix until well combined.
  3. Scoop into Muffin Tin:

    • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  4. Bake:

    • Bake in the preheated oven for about 15-20 minutes, or until the muffins are set and a toothpick inserted into the center comes out clean.
  5. Cool:

    • Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  6. Serve:

    • Enjoy your oatmeal muffins warm or at room temperature. They can be stored in an airtight container for up to 3 days or frozen for longer storage.

Tips:

  • Customization: Feel free to experiment with different flavors by adding spices like nutmeg or ginger, or by incorporating fresh fruit like blueberries or diced apples.
