Ingredients:

For the Teriyaki Chicken:

  • 1 lb (450 g) boneless, skinless chicken thighs or breasts
  • 1/2 cup teriyaki sauce (store-bought or homemade)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 8 small flour or corn tortillas

For the Grilled Pineapple Pear Salsa:

  • 1 cup fresh pineapple, diced
  • 1 ripe pear, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions:

  1. Marinate the Chicken:

    • In a bowl, combine the chicken with the teriyaki sauce, olive oil, salt, and pepper. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
  2. Prepare the Grilled Pineapple Pear Salsa:

    • Preheat a grill or grill pan over medium-high heat.
    • Grill the diced pineapple for about 2-3 minutes on each side until caramelized and slightly charred. Remove from the grill and let it cool slightly.
    • In a mixing bowl, combine the grilled pineapple, diced pear, red onion, cilantro, lime juice, salt, and pepper. Mix well and set aside.
  3. Cook the Chicken:

    • In the same grill or grill pan, cook the marinated chicken over medium-high heat for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
    • Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.
  4. Warm the Tortillas:

    • While the chicken is resting, warm the tortillas on the grill or in a skillet for about 30 seconds on each side until soft and pliable.
  5. Assemble the Tacos:

    • Place a few strips of teriyaki chicken on each tortilla. Top with the grilled pineapple pear salsa.
  6. Serve:

    • Serve the tacos warm, garnished with additional cilantro or lime wedges if desired.

Tips:

  • You can add toppings like avocado, shredded cabbage, or a drizzle of sriracha for extra flavor and texture.
  • For a vegetarian option, substitute the chicken with grilled tofu or tempeh marinated in teriyaki sauce.
