Here’s a simple and delicious recipe for Strawberry Ice Cream! This homemade ice cream is creamy, fruity, and perfect for warm days. You can make it with or without an ice cream maker.

Strawberry Ice Cream Recipe

Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 3/4 cup granulated sugar (adjust based on sweetness preference)
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 1 cup whole milk (or almond milk for dairy-free)
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

1. Prepare the Strawberries:

  • In a medium bowl, combine the sliced strawberries and 1/4 cup of the sugar. Let them sit for about 15-20 minutes to macerate. This will help release the juices and enhance the flavor.

2. Blend the Strawberries:

  • After the strawberries have macerated, use a fork or a potato masher to mash them slightly, or blend them in a blender or food processor for a smoother consistency. You can leave some chunks for texture if you prefer.

3. Mix the Ice Cream Base:

  • In a large mixing bowl, whisk together the remaining sugar, heavy cream, milk, vanilla extract, and a pinch of salt until the sugar is dissolved.

4. Combine:

  • Stir in the mashed strawberries (and their juices) into the cream mixture. Mix until well combined.

5. Churn the Ice Cream:

  • Using an Ice Cream Maker: Pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes, until it reaches a soft-serve consistency. Transfer to an airtight container and freeze for at least 4 hours to firm up.
  • Without an Ice Cream Maker: Pour the mixture into a shallow dish and place it in the freezer. Every 30 minutes, stir the mixture with a fork to break up any ice crystals. Repeat this process for about 2-3 hours, or until the ice cream is firm and creamy.

6. Serve:

  • Once the ice cream is firm, scoop it into bowls or cones and enjoy! You can garnish with fresh strawberries or a drizzle of chocolate sauce if desired.

Tips:

  • Storage: Store any leftover ice cream in an airtight container in the freezer for up to 2 weeks. Let it sit at room temperature for a few minutes before scooping if it becomes too hard.
  • Variations: You can add other fruits like blueberries or raspberries for a mixed berry ice cream. You can also swirl in some strawberry sauce or chocolate sauce for added flavor.
