Here’s a delightful recipe for Strawberry Cheesecake Crumbl Cookies. These cookies are soft, chewy, and packed with the delicious flavors of strawberry and cheesecake!

Ingredients:

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips (or chocolate chips of your choice)
  • 1 cup freeze-dried strawberries, crushed (or fresh strawberries, diced)

For the Cheesecake Filling:

  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon milk (or as needed for consistency)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Make the Cheesecake Filling:

    • In a medium bowl, beat together the softened cream cheese, granulated sugar, vanilla extract, and milk until smooth and creamy. Set aside.
  3. Prepare the Cookie Dough:

    • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
    • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
    • In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Fold in the white chocolate chips and crushed freeze-dried strawberries.
  4. Assemble the Cookies:

    • Scoop a tablespoon of cookie dough and flatten it slightly in your hand. Place about 1 teaspoon of the cheesecake filling in the center, then fold the cookie dough around the filling to enclose it. Roll it into a ball and place it on the prepared baking sheet. Repeat with the remaining dough and filling, spacing the cookies about 2 inches apart.
  5. Bake:

    • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will firm up as they cool.
  6. Cool and Serve:

    • Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Tips:

  • For added flavor, you can mix in some lemon zest into the cheesecake filling.
  • If using fresh strawberries, make sure to chop them finely and pat them dry to avoid excess moisture in the cookies.
