Here’s a simple and delicious recipe for Sourdough Discard Pizza! This recipe utilizes your sourdough starter discard to create a flavorful pizza crust that’s easy to make and perfect for topping with your favorite ingredients.

Sourdough Discard Pizza Recipe

Ingredients

For the Pizza Dough:

  • 1 cup sourdough starter discard (unfed)
  • 1 cup all-purpose flour (plus more for dusting)
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar (optional)
  • 1/2 teaspoon baking powder
  • 1/4 cup warm water (adjust as needed)
  • 1 tablespoon olive oil (plus more for greasing)

For the Toppings:

  • 1/2 cup pizza sauce (store-bought or homemade)
  • 1-2 cups shredded cheese (mozzarella, cheddar, or your choice)
  • Toppings of your choice (pepperoni, vegetables, olives, etc.)
  • Fresh basil or oregano (optional, for garnish)

Instructions

  1. Prepare the Dough:

    • In a mixing bowl, combine the sourdough starter discard, flour, salt, sugar (if using), baking powder, warm water, and olive oil. Mix until a dough forms. If the dough is too sticky, add a little more flour as needed.
  2. Knead the Dough:

    • Turn the dough out onto a floured surface and knead for about 2-3 minutes until smooth. The dough should be soft but not sticky.
  3. Rest the Dough:

    • Cover the dough with a clean kitchen towel or plastic wrap and let it rest for about 30 minutes. This allows the gluten to relax and makes it easier to roll out.
  4. Preheat the Oven:

    • Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up as well.
  5. Shape the Pizza:

    • After resting, turn the dough out onto a floured surface. Roll it out into your desired shape (round or rectangular) and thickness. Transfer the rolled-out dough to a parchment-lined baking sheet or a pizza peel if using a pizza stone.
  6. Add Toppings:

    • Spread the pizza sauce evenly over the dough, leaving a small border around the edges. Sprinkle the shredded cheese on top and add your desired toppings.
  7. Bake the Pizza:

    • If using a pizza stone, carefully transfer the pizza onto the hot stone. If using a baking sheet, simply place it in the oven. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and melted.
  8. Serve:

    • Remove the pizza from the oven and let it cool for a minute. Garnish with fresh basil or oregano if desired. Slice and enjoy!

Tips:

  • Storage: Leftover pizza can be stored in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
  • Variations: Feel free to experiment with different sauces, cheeses, and toppings to create your perfect pizza.
  • Make Ahead: You can prepare the dough in advance and let it rise in the refrigerator overnight for a more developed flavor.
