Rindergulasch Homemade with Egg Noodles

Here’s a delicious recipe for homemade Rindergulasch (beef goulash) served with egg noodles. This hearty dish is perfect for a comforting meal.

Rindergulasch (Beef Goulash) with Egg Noodles

Ingredients

For the Rindergulasch:

  • 2 lbs (900 g) beef chuck or stewing beef, cut into 1-inch cubes
  • 2 tablespoons vegetable oil or lard
  • 2 large onions, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons sweet paprika (preferably Hungarian)
  • 1 teaspoon caraway seeds (optional)
  • 1 teaspoon dried thyme
  • 1 can (14 oz) diced tomatoes (or 2-3 fresh tomatoes, chopped)
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • Salt and pepper to taste
  • 1-2 tablespoons vinegar (optional, for brightness)
  • Fresh parsley, chopped (for garnish)

For the Egg Noodles:

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
  • Water (as needed)

Instructions

1. Prepare the Rindergulasch:

  • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  • Add the beef cubes in batches, browning them on all sides. Remove the beef and set aside.
  • In the same pot, add the chopped onions and sauté until they are soft and translucent, about 5-7 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Stir in the paprika, caraway seeds, and thyme, cooking for another minute to release the flavors.
  • Return the browned beef to the pot and add the diced tomatoes, beef broth, tomato paste, and bay leaf. Stir well to combine.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender. Stir occasionally and add more broth or water if needed.
  • Season with salt, pepper, and vinegar (if using) to taste. Remove the bay leaf before serving.

2. Prepare the Egg Noodles:

  • In a mixing bowl, combine the flour and salt. Make a well in the center and add the eggs.
  • Mix the eggs into the flour using a fork, gradually incorporating the flour until a dough forms. If the dough is too dry, add a little water, one tablespoon at a time, until it comes together.
  • Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
  • After resting, roll out the dough to your desired thickness (about 1/8 inch) and cut it into strips or your preferred noodle shape.
  • Bring a large pot of salted water to a boil. Cook the egg noodles for about 3-5 minutes or until they float to the top and are tender. Drain and set aside.

3. Serve:

  • Serve the Rindergulasch over the egg noodles, garnished with fresh parsley. Enjoy your hearty meal!

Tips:

  • You can add bell peppers or mushrooms to the goulash for extra flavor and texture.
  • Adjust the seasoning according to your taste preferences.
  • This dish pairs well with a side of crusty bread or a simple green salad.
