Rice Krispies Chocolate Peanut Butter Balls are an easy and delicious no-bake treat that combines the crispy crunch of Rice Krispies with the richness of chocolate and the savory taste of peanut butter. These little bites are perfect for any occasion, whether as a snack or a party treat. Here’s a simple recipe for you to try:

Rice Krispies Chocolate Peanut Butter Balls

Ingredients:

  • 2 cups Rice Krispies cereal
  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter (melted)
  • 1 1/2 cups powdered sugar (confectioners’ sugar)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips
  • 2 tablespoons vegetable oil (or coconut oil)

Instructions:

  1. Prepare the mixture:
    • In a large mixing bowl, combine the peanut butter, melted butter, powdered sugar, and vanilla extract. Stir until smooth and well combined.
    • Add the Rice Krispies cereal to the mixture and gently fold it in until the cereal is evenly coated with the peanut butter mixture.
  2. Form the balls:
    • Using your hands, shape the mixture into small bite-sized balls (about 1 inch in diameter). Place the balls on a baking sheet lined with parchment paper or wax paper. You should get around 20-24 balls, depending on the size.
  3. Chill the balls:
    • Place the balls in the refrigerator for at least 30 minutes to firm up and set. This will make them easier to dip in the chocolate.
  4. Melt the chocolate:
    • In a microwave-safe bowl, melt the chocolate chips with the vegetable oil. Heat in 30-second intervals, stirring after each interval until the chocolate is completely smooth and melted. Alternatively, you can melt the chocolate in a heatproof bowl over simmering water (double boiler method).
  5. Coat the balls:
    • Once the peanut butter Rice Krispies balls have chilled, dip each one into the melted chocolate, rolling it around to coat it completely. You can use a fork to dip them and gently tap off any excess chocolate.
  6. Set the chocolate:
    • Place the chocolate-coated balls back on the parchment-lined baking sheet. If desired, you can sprinkle a bit of sea salt on top of each ball for an extra flavor boost.
    • Chill the balls in the refrigerator again for about 15 minutes, or until the chocolate coating is firm.
  7. Serve and enjoy:
    • Once the chocolate is set, your Rice Krispies Chocolate Peanut Butter Balls are ready to enjoy!

Tips:

  • Storage: Store these balls in an airtight container in the refrigerator for up to a week, or freeze them for up to 3 months.
  • Customizations: Feel free to add mix-ins like mini chocolate chips, chopped nuts, or dried fruit to the peanut butter mixture before shaping the balls.
  • Flavor variations: For extra flavor, you can use crunchy peanut butter instead of creamy for a bit of texture, or drizzle some melted white chocolate over the top.

These Rice Krispies Chocolate Peanut Butter Balls are the perfect balance of sweet, salty, and crunchy, making them a hit with anyone who loves peanut butter and chocolate!
