Raspberry Kiffles (or Kifli) are delightful pastries filled with raspberry jam or preserves, often enjoyed as a sweet treat or dessert. They have a tender, flaky dough that pairs perfectly with the tartness of the raspberry filling. Here’s a simple recipe to make your own raspberry kiffles at home!

Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened (2 sticks)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

For the Filling:

  • 1 cup raspberry jam or preserves (you can also use other fruit jams if desired)

For Topping:

  • Powdered sugar (for dusting)

Instructions

  1. Make the Dough:

    • In a large bowl, combine the flour and salt. In another bowl, beat together the softened butter, cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
    • Gradually add the flour mixture to the butter mixture, mixing until a soft dough forms. Be careful not to overmix.
    • Divide the dough into two equal portions, flatten each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour (or up to overnight).
  2. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  3. Roll Out the Dough:

    • On a lightly floured surface, take one disk of dough out of the refrigerator. Roll it out to about 1/8 inch thick. Use a sharp knife or a pizza cutter to cut the dough into squares (about 3×3 inches).
  4. Fill the Kiffles:

    • Place about 1 teaspoon of raspberry jam in the center of each square. Fold the corners of the square over the filling to form a triangle or a pocket, pinching the edges to seal. You can also fold them into a crescent shape if you prefer.
  5. Bake:

    • Place the filled kiffles on the prepared baking sheet, leaving some space between them. Bake in the preheated oven for about 20-25 minutes, or until they are lightly golden.
  6. Cool and Dust:

    • Once baked, remove the kiffles from the oven and let them cool on a wire rack. Once cooled, dust them with powdered sugar before serving.

Tips:

  • Filling Variations: You can use other fruit jams or preserves, such as apricot, peach, or even nut fillings like ground walnuts or poppy seeds.
  • Storage: Store any leftovers in an airtight container at room temperature for up to 3 days. They can also be frozen for longer storage; just thaw before serving.
  • Serving Suggestions: Kiffles are great for breakfast, as a snack, or as a dessert with coffee or tea.
