Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Peanut Butter Filling:

  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream (or whipped topping)

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • Optional: chopped peanuts for garnish

Instructions

  1. Prepare the Crust:

    • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
    • Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form the crust. Use the back of a measuring cup or your fingers to pack it down evenly.
    • Place the crust in the refrigerator to chill while you prepare the filling.
  2. Make the Peanut Butter Filling:

    • In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.
    • Add the creamy peanut butter, powdered sugar, and vanilla extract. Mix until well combined and smooth.
    • Gently fold in the whipped cream until fully incorporated. Be careful not to deflate the whipped cream.
  3. Assemble the Pie:

    • Pour the peanut butter filling into the chilled graham cracker crust. Spread it evenly with a spatula.
    • Cover the pie with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow it to set.
  4. Prepare the Chocolate Topping:

    • In a small saucepan over low heat, combine the chocolate chips and heavy cream. Stir continuously until the chocolate is melted and the mixture is smooth.
    • Remove from heat and let it cool slightly before pouring it over the chilled peanut butter filling.
  5. Finish the Pie:

    • Once the chocolate topping has cooled slightly, pour it over the peanut butter filling, spreading it evenly.
    • If desired, sprinkle chopped peanuts on top for garnish.
    • Return the pie to the refrigerator for an additional 30 minutes to set the chocolate topping.
