  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) tomato sauce
  • 1 can (14.5 ounces) diced tomatoes (with juices)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside.
  2. Prepare the Beef Filling:

    • In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
    • Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes.
    • Stir in the tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for about 5-7 minutes, allowing the flavors to meld.
  3. Mix the Cheese Filling:

    • In a separate bowl, combine the ricotta cheese, shredded mozzarella cheese, and grated Parmesan cheese. Mix well.
  4. Stuff the Pasta Shells:

    • Preheat your oven to 350°F (175°C).
    • Spread a thin layer of the beef mixture on the bottom of a 9×13 inch baking dish.
    • Using a spoon, fill each cooked pasta shell with the cheese mixture and place them in the baking dish, open side up.
    • Once all the shells are filled, pour the remaining beef mixture over the top, ensuring the shells are well covered. Sprinkle additional mozzarella cheese on top.
  5. Bake:

    • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  6. Serve:

    • Remove from the oven and let it cool for a few minutes. Garnish with fresh basil or parsley if desired.
    • Serve warm and enjoy!

Enjoy!
