Old-fashioned gumdrop cake is a delightful dessert that combines the sweetness of gumdrops with a moist cake base. It’s a nostalgic treat that’s perfect for holidays or special occasions. Here’s a classic recipe for making gumdrop cake.

Old-Fashioned Gumdrop Cake Recipe

Ingredients:

  • 1 cup gumdrops (cut into small pieces)
  • 1/2 cup chopped nuts (walnuts or pecans, optional)
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk (or milk with 1 tablespoon vinegar added)
  • Optional: powdered sugar for dusting

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or a bundt pan.

2. Prepare the Gumdrops:

  • In a small bowl, toss the cut gumdrops with a tablespoon of flour. This helps prevent them from sinking to the bottom of the cake during baking.

3. Cream the Butter and Sugar:

  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-5 minutes.

4. Add Eggs and Vanilla:

  • Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

5. Combine Dry Ingredients:

  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

6. Mix the Batter:

  • Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing until just combined.

7. Fold in Gumdrops and Nuts:

  • Gently fold in the floured gumdrops and chopped nuts (if using) until evenly distributed throughout the batter.

8. Pour into Pan:

  • Pour the batter into the prepared loaf or bundt pan, smoothing the top with a spatula.

9. Bake:

  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If using a bundt pan, it may take a bit longer.

10. Cool and Serve:

  • Allow the cake to cool in the pan for about 10-15 minutes before transferring it to a wire rack to cool completely. If desired, dust with powdered sugar before serving.

Tips:

  • You can use any variety of gumdrops, including fruit-flavored or spiced ones, depending on your preference.
  • This cake can be stored in an airtight container at room temperature for several days and also freezes well.
