Oat cakes are a delicious and wholesome treat that can be enjoyed as a snack or breakfast option. They are typically made with oats, flour, and a few other simple ingredients. Here’s a straightforward recipe for making oat cakes at home.

Oat Cakes Recipe

Ingredients:

  • 2 cups rolled oats
  • 1 cup all-purpose flour (or whole wheat flour for a healthier option)
  • 1/2 cup brown sugar (or granulated sugar)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup unsalted butter, melted (or coconut oil for a dairy-free option)
  • 1/2 cup milk (or a non-dairy alternative)
  • 1 teaspoon vanilla extract
  • Optional add-ins: raisins, nuts, seeds, or chocolate chips

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or grease it lightly.

2. Mix Dry Ingredients:

  • In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking powder, salt, and ground cinnamon (if using). Mix well to combine.

3. Combine Wet Ingredients:

  • In a separate bowl, whisk together the melted butter, milk, and vanilla extract until well combined.

4. Combine Wet and Dry Ingredients:

  • Pour the wet ingredients into the dry ingredients and stir until just combined. If you’re adding any optional ingredients (like raisins, nuts, or chocolate chips), fold them in at this stage.

5. Shape the Oat Cakes:

  • Using your hands or a spoon, scoop out portions of the dough and shape them into small rounds or patties. Place them on the prepared baking sheet, leaving some space between each oat cake.

6. Bake:

  • Bake in the preheated oven for about 15-20 minutes, or until the oat cakes are lightly golden and firm to the touch.

7. Cool and Serve:

  • Allow the oat cakes to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy them warm or at room temperature!

Tips:

  • Store oat cakes in an airtight container at room temperature for up to a week, or freeze them for longer storage.
  • You can customize the flavor by adding spices like nutmeg or ginger, or by incorporating different mix-ins like dried fruit or seeds.
