No Bake Coconut Cream Pie

Here’s a delicious recipe for a No Bake Coconut Cream Pie. This creamy and refreshing dessert is perfect for warm days and is easy to prepare!

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Coconut Cream Filling:

  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup heavy whipping cream
  • 1 cup unsweetened shredded coconut (toasted, if desired)

For the Topping:

  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Additional toasted coconut for garnish (optional)

Instructions:

  1. Prepare the Crust:

    • In a medium bowl, combine the graham cracker crumbs, shredded coconut, granulated sugar, and melted butter. Mix until well combined.
    • Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Set aside.
  2. Make the Coconut Cream Filling:

    • In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
    • Add the vanilla extract and sweetened condensed milk, mixing until well combined.
    • In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
    • Fold in the shredded coconut (toasted if desired) until evenly distributed.
  3. Assemble the Pie:

    • Pour the coconut cream filling into the prepared crust, spreading it evenly. Smooth the top with a spatula.
  4. Chill:

    • Cover the pie with plastic wrap and refrigerate for at least 4 hours, or until set. For best results, chill overnight.
  5. Prepare the Topping:

    • In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
    • Spread the whipped cream topping over the chilled coconut cream filling.
  6. Garnish and Serve:

    • Sprinkle additional toasted coconut on top for garnish, if desired. Slice and serve chilled.

Tips:

  • For extra flavor, you can add a splash of coconut extract to the filling.
  • This pie can be made a day in advance, making it a great option for gatherings or special occasions.
