Marshmallow Caramel Corn

Here’s a delightful recipe for Marshmallow Caramel Corn that combines the sweetness of marshmallows with the rich flavor of caramel for a perfect snack!

Ingredients:

  • 10 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 1 cup unsalted butter (2 sticks)
  • 2 cups brown sugar, packed
  • 1/2 cup light corn syrup
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • Optional: 1 cup chopped nuts (such as pecans or peanuts)

Instructions:

  1. Prepare the Popcorn:

    • Pop the popcorn using an air popper or on the stovetop. Place the popped popcorn in a large mixing bowl, making sure to remove any unpopped kernels.
  2. Make the Caramel Sauce:

    • In a medium saucepan over medium heat, melt the butter. Once melted, stir in the brown sugar, corn syrup, and salt.
    • Bring the mixture to a boil, stirring constantly. Once it reaches a boil, stop stirring and let it boil for 4-5 minutes without stirring.
  3. Add Vanilla:

    • Remove the saucepan from heat and carefully stir in the vanilla extract. Be cautious, as the mixture will bubble up.
  4. Combine with Popcorn:

    • Pour the hot caramel sauce over the popped popcorn. Use a spatula or wooden spoon to gently mix until the popcorn is evenly coated.
  5. Add Marshmallows:

    • While the popcorn is still warm, fold in the mini marshmallows and chopped nuts (if using) until well distributed.
  6. Cool and Set:

    • Spread the caramel corn mixture onto a large baking sheet lined with parchment paper or a silicone baking mat. Allow it to cool completely, which will help it set.
  7. Break Apart and Serve:

    • Once cooled, break the marshmallow caramel corn into pieces and serve. Store any leftovers in an airtight container.
