Low Point Chickpea Salad Recipe

Ingredients

  • For the Salad:

    • 1 can (15 oz) chickpeas, drained and rinsed

    • 1 bell pepper (any color), diced
    • 1/4 red onion, finely chopped
    • 1/4 cup fresh parsley or cilantro, chopped
    • 1/2 avocado, diced (optional, adjust points accordingly)
    • Salt and pepper to taste
  • For the Dressing:

    • 2 tablespoons olive oil (or less, to reduce points)
    • 1 tablespoon red wine vinegar (or lemon juice)
    • 1 teaspoon Dijon mustard (optional)
    • 1 clove garlic, minced
    • 1/2 teaspoon dried oregano
    • Salt and pepper to taste

Instructions

  1. Prepare the Salad:

    • In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, parsley or cilantro, and avocado (if using). Toss gently to combine.
  2. Make the Dressing:

    • In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard (if using), minced garlic, oregano, salt, and pepper until well combined.
  3. Combine:

    • Pour the dressing over the salad and toss gently to coat all the ingredients evenly. Adjust seasoning with more salt and pepper if needed.
  4. Serve:

    • Serve immediately or let the salad sit for about 15-30 minutes to allow the flavors to meld. This salad can be stored in the refrigerator for up to 3 days.
