Lemon Truffles are a refreshing and tangy twist on traditional chocolate truffles. They are creamy, zesty, and have a delightful citrus flavor that melts in your mouth. These truffles are simple to make and perfect for a sweet treat or gift. Here’s a recipe for Lemon Truffles:

Lemon Truffles Recipe

Ingredients:

  • 1 cup white chocolate chips or coarsely chopped white chocolate
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 teaspoons fresh lemon zest (from about 1 lemon)
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon vanilla extract
  • 1/2 cup powdered sugar (optional, for dusting or rolling)
  • Extra lemon zest or finely chopped white chocolate (optional, for coating)

Instructions:

1. Prepare the Ganache:

  • In a small saucepan, heat the heavy cream and butter over medium heat until the cream is just about to boil and the butter is melted. Stir occasionally to ensure the butter doesn’t separate.

2. Melt the White Chocolate:

  • Place the white chocolate chips or chopped white chocolate in a heatproof bowl. Once the cream and butter are hot, pour the mixture over the chocolate. Let it sit for about 1-2 minutes to soften the chocolate, then stir until smooth and completely melted.

3. Add Lemon Flavor:

  • Stir in the lemon zest, lemon juice, and vanilla extract. Mix well to combine.

4. Chill the Mixture:

  • Allow the ganache to cool to room temperature, then refrigerate for about 1-2 hours, or until it’s firm enough to scoop and roll into balls. You can speed this process by placing the bowl in the freezer for about 30 minutes.

5. Roll the Truffles:

  • Once the ganache is firm, use a small spoon or melon baller to scoop out portions of the ganache. Roll them into small balls (about 1 inch in diameter) using your hands. If the mixture is too sticky, you can lightly grease your hands with butter or oil.

6. Coat the Truffles:

  • For a simple coating, roll the truffles in powdered sugar to give them a soft, sweet finish. You can also roll them in more lemon zest or finely chopped white chocolate for an extra burst of flavor and texture.

7. Chill Again:

  • Place the finished truffles on a baking sheet lined with parchment paper and refrigerate them for at least 30 minutes to firm up before serving.

8. Serve:

  • Once chilled and firm, your lemon truffles are ready to enjoy! Serve them at room temperature for the best flavor and texture.

Tips:

  • Add more flavor: If you want more of a lemon kick, you can add a few more teaspoons of lemon zest or juice. Just be careful not to add too much lemon juice, as it can affect the texture of the truffles.
  • Storage: Store the lemon truffles in an airtight container in the refrigerator for up to a week. They can also be frozen for up to 3 months. Let them thaw in the fridge before serving.
  • Decorative coating: For an extra touch, you can dip the truffles in a thin layer of melted white chocolate or drizzle melted chocolate on top for a beautiful finish.
