Here’s a refreshing recipe for Lemon Ice Cream that’s perfect for hot days or as a light dessert. This creamy and tangy treat is easy to make and will surely delight lemon lovers!

Homemade Lemon Ice Cream Recipe

Ingredients

  • 1 cup fresh lemon juice (about 4-6 lemons)
  • Zest of 2 lemons
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Prepare the Lemon Juice and Zest:

    • Zest the lemons first, then juice them to get about 1 cup of fresh lemon juice. Strain the juice to remove any seeds or pulp.
  2. Mix the Ingredients:

    • In a mixing bowl, combine the lemon juice, lemon zest, and granulated sugar. Whisk until the sugar is dissolved.
    • Add the heavy cream, whole milk, vanilla extract, and a pinch of salt. Whisk until well combined.
  3. Chill the Mixture:

    • Cover the mixture and refrigerate for at least 1-2 hours, or until it is thoroughly chilled. This step helps improve the texture of the ice cream.
  4. Churn the Ice Cream:

    • Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes, until it reaches a soft-serve consistency.
  5. Freeze:

    • Transfer the ice cream to an airtight container and freeze for at least 4 hours, or until firm.
  6. Serve:

    • Scoop the lemon ice cream into bowls or cones and enjoy! You can garnish with lemon zest or fresh mint leaves for an extra touch.

Tips:

  • No Ice Cream Maker? If you don’t have an ice cream maker, you can pour the mixture into a shallow dish and freeze it. Stir the mixture every 30 minutes for the first 2-3 hours to break up ice crystals until it reaches the desired consistency.
  • Storage: Store the ice cream in an airtight container in the freezer for up to 2 weeks. Let it sit at room temperature for a few minutes before scooping for easier serving.
  • Variations: For a creamier texture, you can add an extra 1/2 cup of heavy cream. You can also mix in crushed cookies or fresh berries for added flavor and texture.
