Here’s a classic recipe for Italian Pasta with Tomato Sauce (Pasta al Pomodoro). This simple yet delicious dish highlights the flavors of fresh tomatoes, garlic, and basil. It’s perfect for a quick weeknight dinner or a comforting meal any time!

Italian Pasta with Tomato Sauce Recipe

Ingredients

For the Pasta:

  • 12 ounces (340g) pasta (spaghetti, penne, or your choice)
  • Salt (for the pasta water)

For the Tomato Sauce:

  • 2 tablespoons olive oil
  • 3-4 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes (or use fresh tomatoes, peeled and chopped)
  • 1 teaspoon sugar (optional, to balance acidity)
  • Salt and pepper to taste
  • 1/2 teaspoon dried oregano (or a few fresh oregano leaves)
  • Fresh basil leaves, torn (about 1/4 cup)
  • Grated Parmesan cheese (for serving)

Instructions

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta cooking water, then drain the pasta.
  2. Prepare the Sauce:

    • While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant (be careful not to burn it).
    • Add the crushed tomatoes to the skillet. If using fresh tomatoes, add them now. Stir to combine.
    • Season the sauce with sugar (if using), salt, pepper, and dried oregano. Let the sauce simmer for about 15-20 minutes, stirring occasionally, until it thickens slightly.
  3. Combine Pasta and Sauce:

    • Once the sauce is ready, add the cooked pasta to the skillet. Toss to combine, adding a little reserved pasta water if needed to help the sauce coat the pasta evenly.
    • Stir in the torn basil leaves and adjust seasoning with more salt and pepper if needed.
  4. Serve:

    • Serve the pasta hot, topped with grated Parmesan cheese and additional fresh basil if desired.

Tips:

  • Fresh Tomatoes: If using fresh tomatoes, you can blanch them in boiling water for a minute to easily peel the skins off before chopping.
  • Additions: Feel free to add sautéed vegetables (like zucchini or bell peppers), cooked ground meat, or olives to the sauce for extra flavor and texture.
  • Herbs: Fresh herbs like parsley or basil can be added at the end for a burst of freshness.
