Honey Lime Chicken & Avocado Rice Stack is a fresh and flavorful dish that combines marinated chicken, creamy avocado, and seasoned rice in a beautiful layered presentation. Here’s a simple recipe to create this delicious meal.

Honey Lime Chicken & Avocado Rice Stack

Ingredients:

For the Honey Lime Chicken:

  • 1 lb (450g) boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice (freshly squeezed)
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for cooking)

For the Avocado Rice:

  • 1 cup cooked rice (white or brown)
  • 1 ripe avocado, mashed
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Optional: chopped cilantro for garnish

For Assembly:

  • Additional lime wedges for serving
  • Optional toppings: diced tomatoes, corn, black beans, or shredded cheese

Instructions:

1. Marinate the Chicken:

  • In a bowl, whisk together honey, lime juice, soy sauce, minced garlic, ground cumin, salt, and pepper.
  • Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

2. Cook the Chicken:

  • Heat olive oil in a skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
  • Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing.

3. Prepare the Avocado Rice:

  • In a bowl, combine the cooked rice, mashed avocado, lime juice, salt, and pepper. Mix until well combined. Adjust seasoning to taste.

4. Assemble the Stack:

  • Use a ring mold or a small bowl to layer the ingredients. Start with a layer of avocado rice at the bottom, followed by a layer of sliced honey lime chicken.
  • If desired, add additional toppings like diced tomatoes, corn, or black beans before adding another layer of avocado rice and chicken.
  • Carefully remove the ring mold or bowl to reveal the stacked layers.

5. Serve:
