Instructions

    • In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar (if using). Whisk together until well combined.
  2. Combine Wet Ingredients:

    • In a separate bowl, whisk together the buttermilk, egg, and 2 tablespoons of vegetable oil until smooth.
  3. Combine Mixtures:

    • Pour the wet ingredients into the dry ingredients. Stir until just combined. The batter will be thick; let it sit for about 5-10 minutes to thicken further.
  4. Heat the Oil:

    • In a large skillet or frying pan, heat about 1/4 inch of vegetable oil over medium heat. You can test if the oil is hot enough by dropping a small amount of batter into the oil; it should sizzle immediately.
  5. Fry the Hoecakes:

    • Using a spoon or a small ladle, drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon. Fry in batches, being careful not to overcrowd the pan.
