Here’s a refreshing and easy recipe for Cucumber Salad! This salad is light, crisp, and perfect as a side dish or a healthy snack. It’s versatile and can be customized with various ingredients and dressings.

Cucumber Salad Recipe

Ingredients

  • 2 large cucumbers (English or regular), thinly sliced
  • 1/2 red onion, thinly sliced (optional)
  • 1 cup cherry tomatoes, halved (optional)
  • 1/4 cup fresh dill, chopped (or parsley, if you prefer)
  • 1/4 cup feta cheese, crumbled (optional)

For the Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons white wine vinegar (or apple cider vinegar)
  • 1 teaspoon Dijon mustard (optional)
  • 1 clove garlic, minced (optional)
  • Salt and pepper to taste
  • 1 teaspoon sugar or honey (optional, to balance acidity)

Instructions

  1. Prepare the Vegetables:

    • In a large bowl, combine the sliced cucumbers, red onion (if using), cherry tomatoes (if using), and fresh dill. Toss gently to mix.
  2. Make the Dressing:

    • In a small bowl or jar, whisk together the olive oil, vinegar, Dijon mustard (if using), minced garlic (if using), salt, pepper, and sugar or honey (if using). Adjust the seasoning to taste.
  3. Combine:

    • Pour the dressing over the cucumber mixture and toss gently to coat all the ingredients evenly.
  4. Chill and Serve:

    • Let the salad sit for about 15-30 minutes to allow the flavors to meld. You can serve it immediately or refrigerate it for a couple of hours. It’s even better the next day!
  5. Add Feta (if using):

    • If you’re using feta cheese, sprinkle it over the salad just before serving to keep it fresh.

Tips:

  • Customization: Feel free to add other ingredients like bell peppers, radishes, or avocado for extra flavor and texture.
  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 2 days. The cucumbers may release some water, so you might want to drain it before serving.
