Crunchy Chicken Casserole Recipe

Ingredients

  • 4 cups cooked chicken, shredded or diced (rotisserie chicken works well)
  • 1 can (10.5 oz) cream of chicken soup (or homemade equivalent)
  • 1 cup sour cream
  • 1 cup frozen mixed vegetables (peas, carrots, corn, etc.)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)
  • 2 cups crushed cornflakes or potato chips (for topping)
  • 1/4 cup (1/2 stick) unsalted butter, melted

Instructions

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

2. Prepare the Chicken Mixture:

  • In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper. If using, stir in the shredded cheddar cheese.

3. Assemble the Casserole:

  • Pour the chicken mixture into a greased 9×13-inch baking dish, spreading it evenly.

4. Prepare the Crunchy Topping:

  • In a separate bowl, combine the crushed cornflakes (or potato chips) with the melted butter. Mix until the cornflakes are well coated.

5. Add the Topping:

  • Sprinkle the buttery cornflake mixture evenly over the chicken mixture in the baking dish.

6. Bake:

  • Bake in the preheated oven for 30-35 minutes, or until the casserole is hot and bubbly, and the topping is golden brown.

7. Serve:
