Ingredients:

For the Meatloaf:

  • 1 lb (450 g) ground beef
  • 1/2 lb (225 g) ground pork (or additional ground beef)
  • 1 cup breadcrumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup French onion soup (canned or homemade)
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

For the Topping:

  • 1 cup French onion soup (canned or homemade)
  • 1 cup Swiss cheese, shredded
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Prepare the Meatloaf Mixture:

    • In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, chopped onion, 1/2 cup French onion soup, egg, garlic powder, Worcestershire sauce, salt, and pepper. Mix until just combined; do not overmix.
  2. Shape the Meatloaf:

    • Form the meat mixture into a loaf shape and place it in the center of the crockpot.
  3. Add the Soup:

    • Pour the remaining 1 cup of French onion soup over the top of the meatloaf.
  4. Cook in the Crockpot:

    • Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the meatloaf is cooked through (internal temperature should reach 160°F or 70°C).
  5. Add the Cheese:

    • About 15 minutes before serving, sprinkle the shredded Swiss cheese over the top of the meatloaf. Cover and let the cheese melt.
  6. Serve:

    • Once the cheese is melted and bubbly, carefully remove the meatloaf from the crockpot. Let it rest for a few minutes before slicing.
    • Garnish with chopped fresh parsley if desired, and serve with your favorite sides.
