Ingredients

  • 2 medium zucchinis, sliced into ¼-inch thick rounds
  • 1 cup breadcrumbs (panko works best for extra crunch)
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 large eggs
  • 2 tbsp milk
  • Olive oil spray (or additional olive oil for drizzling)

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Breading Mixture:

    • In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper. Mix well.
  3. Prepare the Egg Wash:

    • In another shallow bowl, whisk together the eggs and milk until well combined.
  4. Bread the Zucchini Rounds:

    • Dip each zucchini round into the egg wash, allowing any excess to drip off.
    • Then, coat the zucchini in the breadcrumb mixture, pressing gently to ensure the crumbs adhere well. Place the breaded zucchini rounds on the prepared baking sheet.
  5. Spray with Olive Oil:

    • Lightly spray the tops of the zucchini rounds with olive oil spray or drizzle a small amount of olive oil over them for extra crispiness.
  6. Bake:

    • Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the zucchini rounds are golden brown and crispy.
  7. Serve:

    • Remove from the oven and let cool slightly before serving. Enjoy them warm as a snack or side dish!

Tips

  • Dipping Sauce: Serve with marinara sauce, ranch dressing, or your favorite dipping sauce for added flavor.
  • Seasoning Variations: Feel free to add other spices or herbs to the breadcrumb mixture, such as paprika, cayenne pepper, or Italian seasoning, to customize the flavor.
  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven to maintain crispiness.
