Here’s a delicious recipe for Instant Pot Creamy Tuscan Chicken Pasta! This dish combines tender chicken, pasta, and a creamy Tuscan-inspired sauce, all made in one pot for easy cleanup.

Instant Pot Creamy Tuscan Chicken Pasta Recipe

Ingredients

  • 1 pound boneless, skinless chicken breasts (or thighs)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 8 ounces penne pasta (or your choice of pasta)
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese (or nutritional yeast for dairy-free)
  • Fresh basil for garnish (optional)

Instructions

  1. Sauté the Chicken:

    • Turn on the Instant Pot and select the “Sauté” function. Add the olive oil.
    • Season the chicken breasts with Italian seasoning, garlic powder, salt, and pepper. Once the oil is hot, add the chicken to the pot and sauté for about 3-4 minutes on each side until browned. The chicken does not need to be fully cooked at this stage. Remove the chicken and set aside.
  2. Add Broth and Pasta:

    • Pour in the chicken broth and scrape the bottom of the pot to deglaze, making sure to remove any browned bits.
    • Add the pasta to the pot, followed by the sautéed chicken on top. Do not stir; just make sure the pasta is submerged in the broth.
  3. Pressure Cook:

    • Close the lid of the Instant Pot and set the valve to “Sealing.” Select the “Manual” or “Pressure Cook” function and set the timer for 5 minutes.
    • Once the cooking time is complete, allow for a quick release of pressure.
  4. Make the Sauce:

    • Carefully open the lid and remove the chicken. Shred or dice the chicken and set it aside.
    • Stir in the heavy cream, sun-dried tomatoes, and fresh spinach. Return the shredded chicken to the pot and mix everything together.
    • Add the grated Parmesan cheese and stir until melted and creamy. If the sauce is too thick, you can add a little more chicken broth or water to reach your desired consistency.
  5. Serve:

    • Taste and adjust seasoning if needed. Serve the creamy Tuscan chicken pasta warm, garnished with fresh basil if desired.

Tips:

  • Customization: Feel free to add other vegetables like bell peppers, mushrooms, or zucchini for extra flavor and nutrition.
  • Dairy-Free Option: Use coconut cream or a dairy-free cream alternative and nutritional yeast instead of Parmesan cheese.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop.
