Cottage Cheese & Spinach Crustless Quiche

Here’s a delicious recipe for Cottage Cheese & Spinach Crustless Quiche:

Ingredients:

  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup fresh spinach, chopped (or 1/2 cup frozen spinach, thawed and drained)
  • 1/2 cup shredded cheese (such as cheddar or mozzarella)
  • 1/4 cup milk (or cream)
  • 1/4 cup onion, finely chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Optional: Nutmeg for seasoning
  • Optional: Fresh herbs (like parsley or chives) for garnish

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or quiche dish.

  2. Sauté the Spinach:

    • In a skillet over medium heat, add a little oil or butter.
    • Sauté the chopped onion and garlic until softened, about 3-4 minutes.
    • Add the chopped spinach and cook until wilted (if using fresh) or heated through (if using frozen). Remove from heat and let cool slightly.
  3. Mix the Egg Mixture:

    • In a large bowl, whisk together the cottage cheese, eggs, milk, salt, pepper, and nutmeg (if using) until well combined.
  4. Combine Ingredients:

    • Stir in the sautéed spinach mixture and shredded cheese into the egg mixture until evenly distributed.
  5. Pour into Dish:

    • Pour the mixture into the prepared pie dish, spreading it evenly.
  6. Bake:

    • Bake in the preheated oven for about 30-35 minutes, or until the quiche is set and lightly golden on top. A knife inserted in the center should come out clean.
  7. Cool and Serve:

    • Allow the quiche to cool for a few minutes before slicing. Garnish with fresh herbs if desired.
