Here’s a simple and delicious recipe for Cottage Cheese Pancakes! These pancakes are fluffy, protein-packed, and make for a great breakfast or brunch option. They’re easy to make and can be served with your favorite toppings.

Cottage Cheese Pancakes Recipe

Ingredients

  • 1 cup cottage cheese (small or large curd)
  • 3 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup milk (or more as needed)
  • 1 tablespoon sugar (optional, adjust to taste)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (optional)
  • Butter or oil for cooking

Instructions

  1. Mix the Wet Ingredients:

    • In a large mixing bowl, combine the cottage cheese, eggs, milk, and vanilla extract (if using). Whisk until well combined.
  2. Combine the Dry Ingredients:

    • In a separate bowl, whisk together the flour, sugar (if using), baking powder, baking soda, and salt.
  3. Combine Wet and Dry Ingredients:

    • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; it’s okay if there are a few lumps. If the batter is too thick, you can add a little more milk to reach your desired consistency.
  4. Cook the Pancakes:

    • Heat a non-stick skillet or griddle over medium heat and add a little butter or oil to coat the surface.
    • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
    • Flip the pancakes and cook for an additional 2-3 minutes on the other side, until golden brown.
  5. Serve:

    • Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, yogurt, or a sprinkle of powdered sugar.

Tips:

  • Add-ins: You can customize your pancakes by adding ingredients like blueberries, chocolate chips, or chopped nuts to the batter before cooking.
  • Storage: Leftover pancakes can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on a skillet.
  • Freezing: You can also freeze pancakes. Place them in a single layer on a baking sheet, freeze until solid, then transfer to a freezer bag. Reheat in the toaster or microwave.
