Cookie Butter & Strawberry Shortcake Cups

Ingredients:

For the Strawberry Layer:

  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar (adjust based on sweetness of strawberries)
  • 1 teaspoon lemon juice (optional)

For the Whipped Cream:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

For the Cookie Butter Layer:

  • 1 cup cookie butter (specifically Biscoff or speculoos spread)
  • 1/2 cup cream cheese, softened (optional for a creamier texture)
  • 1/2 cup crushed cookies (like Biscoff cookies or graham crackers) for layering

Instructions:

1. Prepare the Strawberries:

  • In a bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently and let them sit for about 15-20 minutes to macerate. This will help release the juices and enhance the flavor.

2. Make the Whipped Cream:

  • In a mixing bowl, whip the heavy cream with an electric mixer until it starts to thicken.
  • Add the powdered sugar and vanilla extract, and continue to whip until soft peaks form. Be careful not to overwhip.

3. Prepare the Cookie Butter Layer:

  • In a separate bowl, mix the cookie butter with the softened cream cheese (if using) until smooth and well combined.

4. Assemble the Cups:

  • In serving cups or glasses, start by adding a layer of crushed cookies at the bottom.
  • Next, add a layer of the cookie butter mixture.
  • Follow with a layer of the macerated strawberries.
  • Top with a generous dollop of whipped cream.
  • Repeat the layers until the cups are filled, finishing with whipped cream on top.

5. Garnish:

  • Optionally, you can garnish with additional sliced strawberries, crushed cookies, or a drizzle of cookie butter on top.

6. Chill and Serve:

  • Refrigerate the assembled cups for about 30 minutes to an hour to allow the flavors to meld.
  • Serve chilled and enjoy!
