Here’s a comforting and delicious recipe for Chicken Stuffing Casserole! This dish combines tender chicken, savory stuffing, and creamy sauce, making it a perfect meal for busy weeknights or family gatherings.

Chicken Stuffing Casserole Recipe

Ingredients

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works great)
  • 1 can (10.5 oz) cream of chicken soup (or cream of mushroom soup)
  • 1/2 cup sour cream
  • 1 cup chicken broth (or more for desired consistency)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 package (6 oz) stuffing mix (such as Stove Top)
  • 1/2 cup butter, melted
  • 1 cup frozen mixed vegetables (optional, such as peas and carrots)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Prepare the Chicken Mixture:

    • In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper. If you’re using frozen mixed vegetables, add them to the mixture as well. Stir until well combined.
  3. Transfer to Baking Dish:

    • Pour the chicken mixture into the prepared baking dish and spread it evenly.
  4. Prepare the Stuffing:

    • In a separate bowl, combine the stuffing mix with the melted butter. Stir until the stuffing is evenly coated with butter. If the mixture seems too dry, you can add a little more chicken broth to moisten it.
  5. Top the Casserole:

    • Sprinkle the stuffing mixture evenly over the chicken mixture in the baking dish.
  6. Bake:

    • Bake in the preheated oven for 30-35 minutes, or until the casserole is hot and bubbly, and the stuffing is golden brown.
  7. Serve:

    • Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired. Serve warm and enjoy!

Tips:

  • Make Ahead: You can prepare the casserole in advance and refrigerate it before baking. Just add a few extra minutes to the baking time if baking from cold.
  • Variations: Feel free to customize the casserole by adding other ingredients, such as cooked bacon, mushrooms, or different vegetables.
