Here’s a simple and delicious recipe for Homemade Chicken Sausage! This flavorful sausage is perfect for grilling, sautéing, or adding to your favorite dishes. You can customize the spices and herbs to suit your taste.

Homemade Chicken Sausage Recipe

Ingredients

  • For the Sausage:

    • 1 pound ground chicken (you can use a mix of chicken breast and thighs for more flavor)
    • 1/4 cup ice water (or more if needed)
    • 1/4 cup breadcrumbs (optional, for texture)
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon smoked paprika (or regular paprika)
    • 1 teaspoon dried oregano
    • 1 teaspoon dried thyme
    • 1/4 teaspoon cayenne pepper (optional, for heat)
    • 1 tablespoon fresh parsley, chopped (optional)
  • For the Sausage Casings (optional):

    • Sausage casings (if you want to stuff the sausage)

Instructions

  1. Prepare the Mixture:

    • In a large bowl, combine the ground chicken, ice water, breadcrumbs (if using), salt, black pepper, garlic powder, onion powder, paprika, oregano, thyme, cayenne pepper, and parsley. Mix well until all ingredients are evenly combined. You can use your hands or a spoon.
  2. Test the Flavor:

    • To check the seasoning, you can cook a small patty in a skillet over medium heat. Taste it and adjust the seasoning if necessary.
  3. Form the Sausages:

    • If you’re using sausage casings, rinse them thoroughly and soak them in water for about 30 minutes. Use a sausage stuffer to fill the casings with the chicken mixture, twisting them into links as you go. If you’re not using casings, you can simply form the mixture into patties or logs.
  4. Cook the Sausages:

    • For Casings: Heat a grill or skillet over medium heat. Cook the sausages for about 10-15 minutes, turning occasionally, until they are cooked through and have an internal temperature of 165°F (75°C).
    • For Patties: Heat a skillet over medium heat and add a little oil. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and cooked through.
  5. Serve:

    • Serve the chicken sausages hot with your favorite sides, in a sandwich, or sliced in pasta dishes, salads, or breakfast bowls.

Tips:

  • Storage: Cooked chicken sausages can be stored in an airtight container in the refrigerator for up to 3 days. They can also be frozen for up to 3 months. Reheat in the microwave or on the stovetop before serving.
  • Customization: Feel free to experiment with different herbs and spices to create your own flavor combinations. You can add ingredients like grated cheese, sun-dried tomatoes, or spinach for extra flavor and nutrition.
