Here’s a delicious recipe for Cheesy Potato Balls that are crispy on the outside and gooey on the inside. These make for a perfect appetizer or snack!

Cheesy Potato Balls Recipe

Ingredients

  • 2 cups mashed potatoes (prepared and cooled)
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1/4 cup green onions, chopped (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko or regular)
  • Oil for frying (vegetable or canola oil)

Instructions

  1. Prepare the Potato Mixture:

    • In a large mixing bowl, combine the cooled mashed potatoes, shredded cheese, green onions (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Form the Balls:

    • Using your hands, scoop out a portion of the potato mixture and roll it into a ball, about 1-2 inches in diameter. Repeat until all the mixture is used.
  3. Set Up Breading Station:

    • In three separate bowls, place the flour, beaten eggs, and breadcrumbs.
  4. Bread the Potato Balls:

    • Roll each potato ball in the flour, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the ball in breadcrumbs, pressing gently to adhere. Repeat for all potato balls.
  5. Fry the Potato Balls:

    • In a large skillet or deep fryer, heat oil over medium heat (about 350°F or 175°C). Carefully add the potato balls in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side.
  6. Drain and Serve:

    • Once cooked, remove the potato balls from the oil and place them on a paper towel-lined plate to drain excess oil.
  7. Enjoy:

    • Serve your Cheesy Potato Balls warm with your favorite dipping sauce, such as ranch, marinara, or sour cream.

Tips

  • Baking Option: If you prefer a healthier version, you can bake the potato balls at 400°F (200°C) for about 20-25 minutes, or until golden brown, flipping halfway through.
  • Add-Ins: Feel free to add cooked bacon bits, herbs, or spices to the potato mixture for extra flavor.
