Cheesy Carrot Flatbreads

Here’s a tasty recipe for Cheesy Carrot Flatbreads—perfect for a light lunch or side dish!

Ingredients:

  • 1 cup all-purpose flour (you can substitute with whole wheat flour if preferred)
  • 1/2 cup grated carrots (about 1-2 medium carrots)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (plus extra for cooking)
  • 1/4 cup warm water (more if needed)
  • 1/2 teaspoon garlic powder (optional, for added flavor)
  • Fresh herbs for garnish (optional, like parsley or chives)

Instructions:

1. Make the Dough:

  • In a large bowl, combine the flour, baking powder, salt, pepper, and garlic powder (if using).
  • Add the grated carrots and shredded cheese into the dry mixture, then stir to evenly distribute them.
  • Gradually add the warm water and olive oil, mixing as you go, until the dough comes together. You may need a bit more water, but be careful not to make it too sticky. Aim for a soft but not overly wet dough.
  • Knead the dough on a floured surface for about 2-3 minutes until smooth and elastic.

2. Shape the Flatbreads:

  • Divide the dough into 4-6 small balls (depending on the size you want your flatbreads).
  • Roll each ball out into a flat circle (about 1/4-inch thick) using a rolling pin. You can dust with a little flour to prevent sticking.

3. Cook the Flatbreads:

  • Heat a non-stick skillet or griddle over medium heat and add a little olive oil to coat the pan.
  • Place one flatbread in the skillet and cook for 2-3 minutes until bubbles start to form on the top. Flip the flatbread and cook for another 2 minutes on the other side, or until golden brown spots appear.
  • Repeat with the remaining dough balls, adding a little more oil to the pan as needed.

4. Serve:

  • Serve the warm cheesy carrot flatbreads as they are or with a side of yogurt, chutney, or any dipping sauce you prefer.
  • Garnish with fresh herbs for a nice pop of color and flavor, if desired.

These Cheesy Carrot Flatbreads are soft, savory, and cheesy, with a mild sweetness from the carrots. Enjoy them fresh out of the pan!
