Here’s a delicious and healthy recipe for cauliflower soup that you can easily make at home!

Creamy Cauliflower Soup Recipe

Ingredients

  • 1 large head of cauliflower, chopped into florets
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk (or a non-dairy alternative)
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • Optional toppings: chopped chives, croutons, or grated cheese

Instructions

  1. Sauté the Aromatics:

    • In a large pot, heat the olive oil or butter over medium heat.
    • Add the chopped onion and sauté until translucent, about 5 minutes.
    • Add the minced garlic and cook for an additional minute until fragrant.
  2. Cook the Cauliflower:

    • Add the chopped cauliflower to the pot and stir to combine.
    • Pour in the vegetable or chicken broth, bringing the mixture to a boil.
    • Reduce the heat and let it simmer for about 15-20 minutes, or until the cauliflower is tender.
  3. Blend the Soup:

    • Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, you can carefully transfer the soup in batches to a regular blender.
    • Return the blended soup to the pot.
  4. Add Creaminess:

    • Stir in the milk (or non-dairy alternative) and heat the soup over low heat until warmed through.
    • Season with salt and pepper to taste.
  5. Serve:

    • Ladle the soup into bowls and add your choice of toppings, such as chopped chives, croutons, or grated cheese.
