  • 1 wheel of brie cheese (about 8 ounces)
  • 1 sheet of puff pastry (thawed if frozen)
  • ¼ cup lemon curd (store-bought or homemade)
  • 2 tbsp fresh herbs (such as thyme, rosemary, or parsley), finely chopped
  • 1 egg (for egg wash)
  • Salt and pepper, to taste
  • Optional: additional herbs for garnish

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the Puff Pastry:

    • On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases. Make sure it’s large enough to completely wrap the brie.
  3. Assemble the Brie:

    • Place the wheel of brie in the center of the puff pastry.
    • Spread the lemon curd evenly on top of the brie.
    • Sprinkle the chopped fresh herbs over the lemon curd. Season with a little salt and pepper if desired.
  4. Wrap the Brie:

    • Fold the puff pastry over the brie, starting from one side and working your way around, pinching the seams to seal. Trim any excess pastry if necessary.
    • Ensure the brie is completely enclosed in the pastry.
  5. Prepare for Baking:

    • Place the wrapped brie seam-side down on the prepared baking sheet.
    • In a small bowl, beat the egg and brush it over the puff pastry to give it a golden color when baked.
  6. Bake:

    • Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed.
  7. Serve:

    • Remove from the oven and let it cool for a few minutes before slicing. Serve warm with crackers, sliced baguette, or fresh fruit.
