  • 4 large eggs

  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups fresh or frozen blueberries
  • Optional toppings: sliced almonds, chopped walnuts, or additional fresh fruit

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or a similar-sized oven-safe dish.
  2. Mix the Wet Ingredients:

    • In a large mixing bowl, combine the cottage cheese, eggs, honey (or maple syrup), vanilla extract, baking powder, ground cinnamon, and salt. Mix well until smooth.
  3. Add the Oats and Blueberries:

    • Stir in the rolled oats and gently fold in the blueberries until evenly distributed.
  4. Pour into Baking Dish:
