Bang Bang Chicken Fried Rice

Here’s a flavorful recipe for Bang Bang Chicken Fried Rice that combines tender chicken, vibrant vegetables, and a spicy, creamy sauce for a delicious meal!

Ingredients:

For the Bang Bang Sauce:

  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon soy sauce
  • 1 teaspoon rice vinegar

For the Fried Rice:

  • 2 cups cooked rice (preferably day-old rice for best texture)
  • 1 lb (450 g) chicken breast, diced
  • 2 tablespoons vegetable oil (divided)
  • 1 cup mixed vegetables (such as peas, carrots, and corn)
  • 3 green onions, chopped (white and green parts separated)
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • Optional: Sesame seeds for garnish

Instructions:

  1. Prepare the Bang Bang Sauce:

    • In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, soy sauce, and rice vinegar until smooth. Set aside.
  2. Cook the Chicken:

    • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Stir-Fry the Vegetables:

    • In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and the white parts of the green onions. Sauté for about 30 seconds until fragrant.
    • Add the mixed vegetables and stir-fry for 2-3 minutes until they are tender.
  4. Add the Rice and Eggs:

    • Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked.
    • Add the cooked rice to the skillet, breaking up any clumps. Stir everything together, mixing the rice with the vegetables and eggs.
  5. Combine Everything:

    • Return the cooked chicken to the skillet and pour in the Bang Bang sauce. Stir well to combine all the ingredients and heat through, about 2-3 minutes. Adjust seasoning with salt and pepper if needed.
  6. Serve:

    • Remove from heat and garnish with the green parts of the chopped green onions and sesame seeds if desired. Serve hot.
