Baked Spinach Mushroom Quesadillas

Here’s a tasty recipe for Baked Spinach Mushroom Quesadillas. These quesadillas are packed with flavor and are a great option for a quick meal or snack!

Ingredients:

  • 8 large flour tortillas
  • 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (such as mozzarella, cheddar, or a blend)
  • 1/2 cup cream cheese, softened
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Cooking spray or additional olive oil for brushing

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Sauté the Vegetables:

    • In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5 minutes, or until they are softened and browned.
    • Add the chopped spinach to the skillet and cook for an additional 2-3 minutes, until wilted. Season with garlic powder, onion powder, salt, and pepper. Remove from heat and let cool slightly.
  3. Prepare the Filling:

    • In a mixing bowl, combine the sautéed spinach and mushrooms with the softened cream cheese and shredded cheese. Mix until well combined.
  4. Assemble the Quesadillas:

    • Place a tortilla on a flat surface. Spoon a portion of the filling onto one half of the tortilla, then fold the other half over to create a half-moon shape. Press down gently to seal.
    • Repeat with the remaining tortillas and filling.
  5. Bake the Quesadillas:

    • Place the assembled quesadillas on the prepared baking sheet. Lightly spray the tops with cooking spray or brush with olive oil.
    • Bake in the preheated oven for about 15-20 minutes, or until the quesadillas are golden brown and crispy. Flip them halfway through baking for even crispiness.
  6. Serve:

    • Remove from the oven and let cool for a few minutes. Cut into wedges and serve warm with salsa, guacamole, or sour cream.

Tips:

  • You can customize the filling by adding other ingredients like bell peppers, onions, or cooked chicken.
  • For a spicier kick, consider adding jalapeños or a sprinkle of red pepper flakes to the filling.
