Baked chicken, potatoes, and green beans is a simple and delicious one-pan meal that is perfect for a weeknight dinner. Here’s a straightforward recipe to prepare this wholesome dish.

Baked Chicken, Potatoes, and Green Beans Recipe

Ingredients

  • For the Chicken:

    • 4 bone-in, skin-on chicken thighs (or breasts)
    • 2 tbsp olive oil
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp paprika
    • 1 tsp dried thyme (or your favorite herb)
    • Salt and pepper to taste
  • For the Potatoes:

    • 4 medium-sized potatoes, cut into wedges (Yukon Gold or red potatoes work well)
    • 1 tbsp olive oil
    • ½ tsp garlic powder
    • Salt and pepper to taste
  • For the Green Beans:

    • 1 lb fresh green beans, trimmed
    • 1 tbsp olive oil
    • Salt and pepper to taste
    • Optional: 1 tsp lemon juice or zest for added flavor

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 400°F (200°C).
  2. Prepare the Chicken:

    • In a small bowl, mix together the olive oil, garlic powder, onion powder, paprika, thyme, salt, and pepper.
    • Rub the mixture all over the chicken thighs, ensuring they are well coated.
  3. Prepare the Potatoes:

    • In a separate bowl, toss the potato wedges with olive oil, garlic powder, salt, and pepper until evenly coated.
  4. Arrange in a Baking Dish:

    • In a large baking dish or sheet pan, arrange the seasoned chicken thighs in the center.
    • Surround the chicken with the potato wedges, spreading them out evenly.
  5. Bake:

    • Bake in the preheated oven for 30 minutes.
  6. Prepare the Green Beans:

    • While the chicken and potatoes are baking, toss the green beans with olive oil, salt, pepper, and optional lemon juice or zest.
  7. Add Green Beans:

    • After 30 minutes, remove the baking dish from the oven and add the green beans around the chicken and potatoes.
    • Return to the oven and bake for an additional 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the potatoes are tender.
  8. Serve:

    • Once cooked, remove from the oven and let it rest for a few minutes before serving. Enjoy your baked chicken, potatoes, and green beans!

Tips

  • Feel free to customize the seasoning to your taste. Herbs like rosemary, oregano, or Italian seasoning can be great alternatives.
