Baked chicken cordon bleu is a delicious and healthier twist on the classic dish, featuring chicken breasts stuffed with ham and cheese, then baked to perfection. Here’s a simple recipe to make baked chicken cordon bleu at home.

Baked Chicken Cordon Bleu Recipe

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 slices of ham (such as Swiss or deli ham)
  • 4 slices of Swiss cheese (or your choice of cheese)
  • 1 cup breadcrumbs (panko breadcrumbs work well for extra crunch)
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried thyme (or Italian seasoning)
  • Salt and pepper, to taste
  • 2 large eggs
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil or melted butter (for drizzling)

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C). Grease a baking dish or line it with parchment paper.
  2. Prepare the Chicken:

    • Place each chicken breast between two pieces of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound the chicken to an even thickness (about ½ inch).
  3. Assemble the Filling:

    • Lay a slice of ham and a slice of cheese on each chicken breast. Roll the chicken tightly, starting from one end, and secure with toothpicks or kitchen twine.
  4. Prepare the Breading:

    • In a shallow bowl, whisk together the eggs and Dijon mustard until well combined.
    • In another bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, thyme, salt, and pepper.
  5. Bread the Chicken:

    • Dip each rolled chicken breast into the egg mixture, allowing any excess to drip off. Then, coat it in the breadcrumb mixture, pressing gently to adhere the crumbs.
  6. Bake:

    • Place the breaded chicken rolls in the prepared baking dish. Drizzle with olive oil or melted butter for added flavor and crispiness.
    • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the coating is golden brown.
  7. Serve:

    • Remove from the oven and let the chicken rest for a few minutes before slicing. Serve with your choice of sides, such as steamed vegetables, rice, or a salad.

Tips

  • Cheese Variations: You can use other types of cheese, such as mozzarella or cheddar, depending on your preference.
  • Make Ahead: You can prepare the chicken rolls in advance and refrigerate them until you’re ready to bake.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
