Asada Carne Burrito with Guacamole!

Asada carne burritos are a delicious and hearty Mexican dish filled with marinated grilled steak, beans, rice, and topped with fresh guacamole. Here’s a simple recipe to make your own Asada carne burritos with guacamole at home.

Asada Carne Burrito Recipe

Ingredients

For the Asada (Grilled Steak):

  • 1 pound flank steak or skirt steak
  • 1/4 cup olive oil
  • 1/4 cup lime juice (about 2 limes)
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)

For the Burrito Filling:

  • 2 cups cooked rice (white or brown)
  • 1 can (15 oz) black beans or pinto beans, drained and rinsed
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
  • 1/2 cup salsa (optional)
  • Fresh cilantro, chopped (optional)

For the Guacamole:

  • 2 ripe avocados
  • 1 lime, juiced
  • 1 small onion, finely chopped
  • 1-2 cloves garlic, minced
  • 1 small tomato, diced
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional)

For Assembling:

  • Large flour tortillas (10-12 inches)
  • Sour cream (optional)
  • Additional salsa (optional)

Instructions

1. Marinate the Steak:

  • In a bowl, whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, paprika, salt, black pepper, and cayenne pepper (if using).
  • Place the flank or skirt steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to overnight for more flavor).

2. Grill the Steak:

  • Preheat your grill or grill pan over medium-high heat. Remove the steak from the marinade and discard the marinade.
  • Grill the steak for about 4-6 minutes per side, or until it reaches your desired level of doneness (medium-rare is about 135°F or 57°C).
  • Once cooked, remove the steak from the grill and let it rest for about 5 minutes before slicing it thinly against the grain.

3. Prepare the Guacamole:

  • In a bowl, mash the avocados with a fork. Stir in the lime juice, chopped onion, minced garlic, diced tomato, salt, pepper, and cilantro (if using). Adjust seasoning to taste.

4. Assemble the Burritos:

  • Warm the flour tortillas in a dry skillet or microwave for a few seconds to make them pliable.
  • On each tortilla, layer a portion of rice, black beans, grilled steak, shredded cheese, salsa (if using), and fresh cilantro (if using).
  • Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top to enclose the filling.

5. Serve:

  • Serve the burritos warm with a generous scoop of guacamole on the side, along with sour cream and additional salsa if desired.

Tips

  • Customization: Feel free to add other ingredients to your burrito, such as sautéed peppers and onions, corn, or jalapeños for extra flavor.
  • Storage: If you have leftover burritos, wrap them tightly in foil or plastic wrap and store them in the refrigerator for up to 2 days. Reheat in the microwave or on a skillet.
  • Freezing: You can also freeze assembled burritos. Wrap them tightly in foil and store in a freezer-safe bag for up to 3 months. Reheat from frozen in the oven or microwave.
