Apple Dutch Baby Pancake Recipe

Ingredients

  • For the Pancake:
    • 3 large eggs
    • 3/4 cup milk (dairy or non-dairy)
    • 3/4 cup all-purpose flour (or gluten-free flour)
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla extract
    • 1 tablespoon sugar (optional, adjust based on sweetness preference)
  • For the Apple Topping:
    • 2 medium apples, peeled, cored, and thinly sliced (such as Granny Smith or Honeycrisp)
    • 2 tablespoons butter (or coconut oil for dairy-free)
    • 1 tablespoon brown sugar (or maple syrup)
    • 1 teaspoon cinnamon
    • Optional: powdered sugar for serving

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 425°F (220°C).
  2. Prepare the Apple Topping:

    • In a large oven-safe skillet (preferably cast iron), melt the butter over medium heat.
    • Add the sliced apples, brown sugar, and cinnamon. Sauté for about 5-7 minutes, or until the apples are tender and slightly caramelized. Remove from heat and set aside.
  3. Make the Batter:

    • In a mixing bowl, whisk together the eggs, milk, flour, salt, vanilla extract, and sugar (if using) until smooth and well combined.
  4. Combine and Bake:

    • Pour the batter over the sautéed apples in the skillet.
    • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the pancake is puffed and golden brown around the edges.
  5. Serve:

    • Remove the Dutch baby from the oven and let it cool slightly. It will deflate a bit as it cools.
    • Slice into wedges and serve warm, dusted with powdered sugar if desired.
