WW Lasagna Soup

Weight Watchers Lasagna Soup

Ingredients

  • 1 pound (450g) lean ground turkey or lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups low-sodium chicken or vegetable broth
  • 1 can (15 oz) tomato sauce
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 oz (about 2 cups) uncooked whole wheat or gluten-free lasagna noodles, broken into pieces
  • 1 cup part-skim ricotta cheese
  • 1 cup shredded part-skim mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

1. Cook the Meat:

  • In a large pot or Dutch oven, cook the ground turkey or beef over medium heat until browned. Drain any excess fat. Add the chopped onion and garlic, and sauté until the onion is translucent.

2. Add Tomatoes and Broth:

  • Stir in the crushed tomatoes, chicken or vegetable broth, tomato sauce, Italian seasoning, dried basil, salt, and pepper. Bring the mixture to a boil.

3. Add Noodles:

  • Once boiling, add the broken lasagna noodles to the pot. Reduce the heat to a simmer and cook for about 10-12 minutes, or until the noodles are tender.

4. Prepare the Cheese Mixture:

  • In a small bowl, mix the ricotta cheese with a pinch of salt and pepper. This will be added to the soup when serving.

5. Serve:

  • Ladle the soup into bowls. Top each serving with a spoonful of the ricotta mixture and a sprinkle of shredded mozzarella cheese. If desired, garnish with fresh basil or parsley.

Tips

  • Make it Vegetarian: Substitute the ground meat with lentils or mushrooms for a vegetarian version.
  • Add Vegetables: Feel free to add chopped spinach, zucchini, or bell peppers to the soup for extra nutrition.
  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave.
