  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice (optional, for flavor)

For Serving:

  • Fresh berries (optional, for garnish)
  • Sugar-free syrup or whipped cream (optional)

Instructions

1. Make the Blintz Crepes:

  • In a mixing bowl, combine the softened cream cheese, eggs, almond flour, baking powder, vanilla extract, and salt. Whisk until smooth and well combined.
  • Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.
  • Pour about 1/4 cup of the batter into the skillet, tilting the pan to spread the batter evenly into a thin layer.
  • Cook for about 2-3 minutes, or until the edges start to lift and the bottom is lightly golden. Carefully flip the crepe and cook for an additional 1-2 minutes on the other side. Remove from the skillet and set aside. Repeat with the remaining batter, stacking the crepes on a plate.

2. Prepare the Filling:

  • In a mixing bowl, combine the softened cream cheese, powdered erythritol, vanilla extract, and lemon juice (if using). Mix until smooth and creamy.

3. Assemble the Blintzes:

  • Take one crepe and place a spoonful of the cream cheese filling in the center. Fold the sides over the filling and then roll it up from the bottom to enclose the filling completely. Repeat with the remaining crepes and filling.

4. Optional: Heat the Blintzes:

  • If desired, you can lightly pan-fry the filled blintzes in a skillet with a little butter until they are golden and heated through.

5. Serve:

  • Serve the blintzes warm, garnished with fresh berries and a drizzle of sugar-free syrup or whipped cream if desired.

Tips

  • Storage: Leftover blintzes can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave before serving.
