Beef and Bean Burritos with Red Chile Sauce

Here’s a delicious recipe for Beef and Bean Burritos with Red Chile Sauce:

Ingredients

For the beef and bean filling:

  • 1 lb ground beef
  • 1 can (15 oz) refried beans
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 packet taco seasoning or 1 tbsp chili powder, cumin, garlic powder, and onion powder (optional)
  • Salt and pepper to taste
  • 1/4 cup water (if needed to help combine)
  • 6-8 flour tortillas (8-inch)

For the red chile sauce:

  • 2-3 dried red chiles (New Mexico, ancho, or guajillo)
  • 2 cups water
  • 1 clove garlic
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt to taste
  • 1 tbsp olive oil (for sautéing)

For garnish (optional):

  • Shredded cheese (cheddar, Mexican blend, or Monterey Jack)
  • Sour cream
  • Fresh cilantro, chopped
  • Salsa or guacamole

Instructions

1. Prepare the red chile sauce:

  • Remove the stems and seeds from the dried red chiles.
  • In a small saucepan, heat the chiles over medium heat for about 2 minutes until they become fragrant. Add 2 cups of water and bring to a simmer.
  • Once simmering, cover and let it cook for about 10 minutes, or until the chiles are soft.
  • Using a blender or immersion blender, combine the chiles, garlic, cumin, chili powder, and salt. Blend until smooth. If it’s too thick, add more water until you get the desired consistency (a pourable sauce).
  • Set aside.

2. Prepare the beef and bean filling:

  • Heat a large skillet over medium-high heat and add the ground beef. Brown the beef, breaking it apart as it cooks.
  • Once the beef is browned, add the diced onion and cook for 3-4 minutes until softened.
  • Add the minced garlic and cook for an additional 30 seconds.
  • Stir in the taco seasoning or spices (chili powder, cumin, garlic powder, onion powder). Add a pinch of salt and pepper.
  • Add the refried beans and a splash of water if needed to make the mixture smoother and easier to stir. Let it all heat through for about 3-5 minutes, adjusting seasoning to taste.

3. Assemble the burritos:

  • Warm the flour tortillas in a dry skillet or microwave for a few seconds until soft.
  • Spoon a generous portion of the beef and bean mixture onto the center of each tortilla.
  • Roll up the tortilla tightly, folding in the sides as you go to make a burrito shape.

4. Cook the burritos:

  • In a clean skillet, heat a little oil over medium-high heat.
  • Place the burritos seam-side down in the skillet and cook for about 2-3 minutes on each side, or until they are lightly golden brown and crispy.

5. Serve:

  • Place the cooked burritos on a serving platter. Pour the red chile sauce generously over the top.
  • Optional: Sprinkle with shredded cheese and let it melt, or serve with sour cream, cilantro, salsa, or guacamole on the side.
