Here’s a classic recipe for Brioche Bread! This rich, buttery bread is perfect for breakfast, sandwiches, or simply enjoyed on its own. It has a soft, tender crumb and a slightly sweet flavor.

Ingredients

For the Dough:

  • 4 cups (500g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/2 cup (120ml) whole milk, warmed (about 110°F or 43°C)
  • 4 large eggs, at room temperature
  • 1 cup (226g) unsalted butter, softened and cut into pieces

For the Egg Wash:

  • 1 large egg
  • 1 tablespoon milk or water

Instructions

  1. Activate the Yeast:

    • In a small bowl, combine the warm milk and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.
  2. Mix the Dough:

    • In a large mixing bowl or the bowl of a stand mixer, combine the flour and salt. Make a well in the center and add the yeast mixture and eggs.
    • Using a wooden spoon or the dough hook attachment, mix until a shaggy dough forms.
  3. Incorporate the Butter:

    • Gradually add the softened butter, a few pieces at a time, mixing until fully incorporated. The dough will be sticky and soft.
  4. Knead the Dough:

    • If using a stand mixer, knead the dough on medium speed for about 10 minutes until it becomes smooth and elastic. If kneading by hand, turn the dough out onto a floured surface and knead for about 15 minutes.
  5. First Rise:

    • Transfer the dough to a greased bowl, cover it with plastic wrap or a clean kitchen towel, and let it rise in a warm place until doubled in size, about 1-2 hours.
  6. Shape the Dough:

    • Once the dough has risen, punch it down to release the air. Turn it out onto a floured surface and divide it into three equal pieces. Roll each piece into a long rope (about 12 inches long).
    • Braid the three ropes together, pinching the ends to seal. Alternatively, you can shape the dough into a loaf by placing it in a greased loaf pan.
  7. Second Rise:

    • Place the braided dough or shaped loaf into a greased loaf pan. Cover it with a kitchen towel and let it rise again until doubled in size, about 1 hour.
  8. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).
  9. Egg Wash:

    • In a small bowl, whisk together the egg and milk (or water) for the egg wash. Gently brush the top of the dough with the egg wash.
  10. Bake:

    • Bake the brioche in the preheated oven for 25-30 minutes, or until golden brown and the internal temperature reaches about 190°F (88°C). If the top is browning too quickly, you can tent it with aluminum foil.
  11. Cool:

    • Remove the brioche from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.

Tips:

  • Storage: Brioche can be stored at room temperature for up to 2 days. For longer storage, wrap it tightly in plastic wrap and freeze for up to 3 months.
  • Flavor Variations: You can add chocolate chips, dried fruit, or nuts to the dough for added flavor and texture.
  • Serving Suggestions: Brioche is delicious on its own, but it’s also great for French toast, sandwiches, or toasted with butter and jam.
