Ingredients

For the Filling:

  • 4 cups green cabbage, finely shredded
  • 1 cup carrots, grated or finely shredded
  • 1 cup mushrooms, finely chopped (optional)
  • 1/2 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced (or 1 teaspoon ground ginger)
  • 2 tablespoons low-sodium soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar (optional)
  • Salt and pepper to taste
  • Optional: 1 cup cooked protein (like chicken, turkey, or tofu) for added flavor

For the Wrappers:

  • 12-16 egg roll wrappers (check for low-calorie options, or use rice paper for a lighter version)

For Baking:

  • Cooking spray or a light brush of oil

Instructions

  1. Prepare the Filling:

    • In a large skillet, sauté the garlic and ginger over medium heat until fragrant (about 1 minute).
    • Add the shredded cabbage, carrots, mushrooms, and green onions. Cook until the vegetables are tender, about 5-7 minutes.
    • Stir in the soy sauce and rice vinegar (if using). Season with salt and pepper to taste. If you’re adding cooked protein, mix it in at this stage. Remove from heat and let the filling cool slightly.
  2. Assemble the Egg Rolls:

    • Lay an egg roll wrapper on a clean surface with one corner pointing toward you (like a diamond shape).
    • Place about 2-3 tablespoons of the filling in the center of the wrapper.
    • Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly to seal. Use a little water to seal the top edge if needed. Repeat with the remaining wrappers and filling.
  3. Bake the Egg Rolls:

    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • Place the egg rolls on the baking sheet and spray lightly with cooking spray or brush with a small amount of oil.
    • Bake for 15-20 minutes, turning halfway through, until golden brown and crispy.
  4. Serve:

    • Serve the egg rolls hot with a dipping sauce of your choice, such as low-sodium soy sauce, sweet chili sauce, or a homemade dipping sauce.

Tips:

  • Air Fryer Option: If you have an air fryer, you can cook the egg rolls at 375°F (190°C) for about 10-12 minutes, flipping halfway through for even crispiness.
  • Vegetable Variations: Feel free to customize the filling with other vegetables like bell peppers, zucchini, or bean sprouts.
  • Storage: Leftover egg rolls can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to maintain crispiness.
